Jorche cellar
The construction of the current Cellar coincides with the begin of a new phase of the winemaking activity of Jorche and with the debut of its new wines.
A modern architectonic structure with progressive vinification systems and a constant monitoring of the product thanks to an internal analysis laboratory. The wines rest in the silence of the new underground wine cellar, where the last refinement of Primitivo happens in the big barrels, in the barriques and in part in the ‘capasuni’ according to the ancient traditional method.

The harvesting
In the vineyards of Jorche the harvesting is a celebration, an ancestral ritual full of fascination.
It is contacted in a manual manner, with an careful selection of bunches which are then deposited in little boxes to keep their integrity and preserving all the aromas.
In the cellar, the grapes are immediately pressed to proceed then to the fermentation and the maceration on the skins in steel containers. Every phase of the harvest and the vinification is controlled and attended in every single step.
